Egg and Bacon on English Muffin

This is a breakfast sandwich recipe is a copycat version of the McDonald’s Egg McMuffin, but so much better – not to mention cheaper!

The four ingredients are easy to assemble (and make- all you need is a microwave.) The flavor is great, and variations are easy to come by. Try it with jalapeños or green olives for an extra flavor boost!

breakfast sandwich ingredientsThe only ingredients that need to be cooked are the bacon and egg. To save myself extra time in the mornings I keep cooked bacon ready in my fridge, so that ingredient is ready to go.

Tip: To save time cook a whole package of bacon at once. Keep the extras in the fridge to reheat as needed. It’s fast, easy, saves time, and helps eliminate some of the excess grease.

cooking an eggCook the egg by placing it in a coffee mug with a little bit of water and microwaving for 1 to 1.5 minutes to cook. You don’t want the yolk completely solid when it’s done, as you will be quickly microwaving all the ingredients together once assembled. If you the egg is microwaved for too long it could become rubbery and tasteless.

Assembled IngredientsAssemble all your ingredients, pop in the microwave for no more than 30 seconds and you have yourself a delicious breakfast sandwich that you can eat on the run!

  1. Cook egg in a coffee mug in the microwave: Place the raw egg inside a mug with 1/2 tsp. of water. Cook in microwave for 1 minute. If yolk is still really runny, cook in microwave for another 30 seconds. Run a knife around edge of egg to remove.
  2. Place cooked bacon, cheese and cooked egg on English Muffin. Place in microwave and cook for 15 to 30 seconds, until cheese is completely melted. Serve warm and enjoy!
