Fresh from the Garden

Garden TimeThe garden is in full swing production mode now and you’re probably starting to wonder what to do with all the delicious goodness that’s coming out of there faster than you can eat it.

Here are some of my favorite recipes out there- Enjoy and share your favs with me!

Zucchini and Summer Squash:

Zucchini Surplus, never, not when you can make Baked Zucchini Fries, healthy, yet delicious!

Everyone likes pizza, right? You can make a Gluten-Free Pizza and have fun switching up the toppings (like other garden produce, perhaps).

Peas:

This Crispy Gnocchi with Morels and Spring Peas recipes just makes me happy. Most of the ingredients can come from my backyard (I have dried morels from this spring…)

Beans:

Fresh Green and Yellow Beans are so good by themselves that they don’t really need much else… Until I discovered this Wilted Green Bean Salad – I mean bacon AND apple cider vinegar, my two favorite food groups, you can’t go wrong!

Okra:

Okra has such a nice texture that it can be used all over the place. A good jambalaya is always a favorite. This Cajun Jambalaya may not focus on okra, but it’s too good to not mention!

I’m going to be spending my summer pickling them, so I’ll share the recipes once I get a few favorites sorted out.

Cucumbers:

When I’m not pickling them, this is my new favorite way to “eat” cukes: in a Cucumber-Blueberry Smoothie (mmm, I may have had one for breakfast)

Potatoes:

It’s been a bit chilly in MN the past week- not complaining, I LOVE it! but it has my mind on comfort food, and Scalloped Potatoes is always a warm-you-to-the-core dish.

Onions:

Not too many super healthy options on my list today (I mentioned it’s been cold, right?) and I’m not about to change that up now, not when Onion Rings are the topic of discussion.
