I spent most of my day today at the clinic today with my brother. He had out patient surgery, (and it went great) but it ended up cutting significantly into my day, which meant a time crunch on everything else I had to do today.
Long story short, instead of the amazing meal I had planned, I decided to pare it down considerably. Turn it into an opportunity to use up some of those delicious leftovers I have in my fridge.
As you’ll recall, earlier this week I made my favorite cool-weather, spicy chili. Chili is amazing, but sometimes, as with all leftovers, you just need to have something “new” to eat. My trick with chili is to turn it into a Chili Quesadilla. The spice, tomatoes, meat and beans are already there, all you need to add is the cheese and tortillas!
Chili should be spread out evenly.
Then do the same with the cheese.Cook your quesadilla under the broiler for a perfect brown crisp bite every time!
The Ingredients:
1/2 cup Leftover Spicy Chili (any chili will work, use your favorite!)
2 Tortillas
1/2 cup Shredded Cheese (Cheddar is my favorite)
Sour Cream for on top (optional)
Recipe:
Layer the leftover chili on top of one of the tortillas. Spread it out evenly. Then spread the cheese evenly over the chili. Top with the last tortilla. Turn the broiler on high and place tortillas on a cookie sheet under the broiler for a minute or until brown. Flip quesadilla and brown other side for 1 minute. Remove from oven and slice. Serve warm and add sour cream or guacamole on top, if so desired.
