The Christmas music is blasting, our tree is decorated and that means it’s time for some cookie baking! Every year the girls in my family get together for a full day of Christmas cookie baking- and while I may not be the best baker I have some extraordinary baker-ladies in my family to pick up my slack. It makes for a great team and a rather delicious day.
We try to switch things up a bit every year by making a few “new” cookies, but there are the staples that we absolutely cannot pass up and these chocolate dipped peanut-butter filled cookies made with Ritz crackers are one of them. They’re easy, delicious and freeze so well that we usually make well over 500 crackers’ worth to enjoy the entire winter.
Chocolate Dipped Peanut-Butter filled cookies
The ingredients for this cookie are simple and the steps are fun and easy to follow, with maybe a little bit of a tasty mess.
Spread peanut butter out on the Ritz crackers- how much peanut butter you want to use is up to you. I always prefer less, but have family members that prefer more. Just make sure it isn’t too much that your Ritz cracker sandwich falls apart.
Top your cracker and peanut butter with another cracker.
Submerge your Ritz cracker sandwich in the melted almond bark chocolate. Wipe off any access chocolate with a second fork otherwise you’ll create a huge mess and run out of chocolate much sooner than expected!
Lay the cookies out on parchment paper to dry and you’re set.
Recipe for Chocolate Dipped Peanut-Butter filled cookies

Ritz Crackers
Creamy Peanut Butter
Chocolate Almond Bark
Sprinkles
Directions:
- Start out by deciding how many cookies you want to make. You’ll need 2 Ritz crackers for each cookie. We usually start out with about a gallon of peanut butter, 2 packages of chocolate almond bark, and 500 Ritz crackers.
- Put your almond bark in a crock pot and set at low heat so that it can start melting while you prepare the crackers for dipping.
- Take a Ritz cracker and using a knife, spread peanut butter across it. Top with another cracker. Put down cracker sandwich and start with the next cracker.
- Once your chocolate almond bark has melted you can start dipping your cracker sandwiches in it. It’s easiest if you use two forks to submerge the cracker and then use a second to wipe off access chocolate.
- Lay chocolate-covered crackers out on a piece of parchment paper to dry.
- After dipping between 10 to 20 cookies make sure to take a break and design or place sprinkles on your cookies- the sprinkles won’t stick after they’re dry!
- Enjoy. They taste especially good served with a warm drink.
