Unlike your standard Caprese Salad this mixed caprese combines ingredients and flavors visually as well as in your mouth. Using a crumbled feta cheese, rather than a mozzarella ball gives the salad a bit more of a salty flavor, with a slight tanginess that pairs nicely with the balsamic vinegar.
The ingredient ratios can be changed around to your liking. Perhaps you like more feta cheese and less vinegar, or maybe you love the smell and flavor of basil- definitely add more! The one ingredient that I would recommend against adding more of is the olive oil- there does not need to be much of it for it to overtake the fresh flavors of the tomato and basil, so add with care.
Enjoy as a part of a larger meal, on a picnic, or as a quick, light lunch. No matter how you serve this salad it will be a highlight of the meal.

- 1 cup Grape or Cherry Tomatoes halved
- 1.5 Tbsp. Feta Cheese crumbled
- 1 tsp. Balsamic Vinegar
- 3/4 tsp. Olive Oil
- Salt & Pepper to taste
- 5-10 leaves Fresh Basil chopped

- Halve the grape or cherry tomatoes and lightly salt. Add feta cheese. Stir in vinegar and olive oil. Top with basil (optional). Add salt and pepper as desired.
