Caprese Salad– my summer favorite. As you have probably guessed by now, anything with vinegar is a winner in my book. Caprese is no different. The vibrant flavors of the mozzarella, basil and fresh tomato combined with a sprinkling of balsamic vinegar gets me every time. I could eat this every day and never get sick of it.
It’s as easy to make as it is to eat. Smooth and it goes fast!
Ingredients:
Raw mozzarella
Fresh basil leaves
Tomatoes (the fresher the better)
Salt
Balsamic vinegar
Extra virgen olive oil, if desired.
Directions
Slice up the mozzarella and tomatoes. Start stacking. Tomato goes down first, then sprinkle a little salt on top to bring out the flavors. Follow by putting down a fresh basil leaf and topping with mozzarella.
Drizzle balsamic vinegar over everything. Then drizzle a tiny amount of olive oil over.
Assume 2 or 3 of these caprese “stacks” per person and assemble based on that number.
Feel free to experiment with quantities. I know I always add more vinegar than I probably should, but it tastes oh-so-good!
