I’m starting the viajar, comer, y celebrar tour with a bang of flavor – Gallo Pinto from Costa Rica
Gallo Pinto: Literally translated to mean “Painted Rooster” this rice dish is the best Costa Rican breakfast food. Heck, it may be the best breakfast food ever, period.
The standard Costa Rican Gallo Pinto consists of black beans, rice and tomatoes. My recipe contains a few more ingredients that rounds out the flavors and gives it the oomph that makes you always want “just one more bite“.
Ingredients:
White rice, tomatoes, cilantro, Chipotle Tabasco, Worcestershire Sauce, black beans, cumin and pork sausage are the main ingredients for Gallo Pinto.
Cook your white rice a day before if you can so that it will have time to cool and be able to soak up more of the diverse flavors, (my rice is less white here because I cooked it in leftover beet water, as I hate to waste leftover nutrients…)
You can also make your own black beans by soaking them overnight and then boiling them over the day. Buying canned beans is a much quicker option, though less authentic.

- 1/2 lb. Ground Pork Sausage
- 1 can Black Beans
- 3 cups White Rice cooked, cooled
- 2 Tomatoes medium size, coarsely chopped
- 1 cup Cilantro leaves washed, removed from stem
- 2 Tbsp. Worcestershire Sauce
- 1.5 Tbsp. Chipotle Tabasco Sauce
- 1/2 tsp. Cumin
- Salt & Pepper to taste

- Brown sausage in frying pan. Drain grease.
- Add white rice and black beans to sausage. Stir completely. Mix in Tabasco and Worcestershire Sauces and cumin. Stir and simmer for 5 min.
- Add tomatoes and cilantro. Add salt and pepper to taste. Stir and serve with a fried egg on top.
I like to serve my gallo pinto with a fried egg on top. One more level of delicious flavor.

Nice! Congrats with the Foodgawker acceptance (you’re going to have NO trouble with that, btw!), and great recipe! I don’t recall having this while in CR, but now I have no excuse not to try it :)

You probably had it in Costa Rica, but in its standard form; rice and black beans and maybe tomatoes and cilantro… I’ve just added flourishes of flavors I love to make it mine- Maybe I should change it to Greta’s Gallo Pinto? :c) I look forward to hearing what you think of it!
