Ingredients
- 2 Stalks Celery 1/4" Slices
- 2 Avocados Cubed
- 3/4 Tbsp. Olive Oil
- 1.5 Tbsp. lemon juice Or juice of 1 lemon
- 1/8 tsp. Salt

Instructions
- Slice celery in 1/4" slices. Cube avocado.
- Combine celery, olive oil, lemon juice and salt in a bowl. Mix together. Add avocado last, so that it doesn't get mushy. Gently mix everything together.
- Let salad sit for at least 15 minutes to soak up the flavors. Serve as a light Summer side salad.
