Gardens, CSA boxes, and Farmers Markets are filled to the brim with amazing looking vegetables. Some common, others not so much, but all delicious. Here are a few wonderful ways to use some of your veggies for the week!
Summer Squash and Zucchini:
Serve your summer squash as a delicious appetizer: Tartines with Rosemary and Lemon.
Cucumbers:
Tzaziki is one of the absolute best sauces/toppings ever invented and you can load it up with little slices of cucumber heaven.
Beans; Pole, Wax, Green, etc:
Like with bacon, everything is better with chorizo, and since yellow wax beans are great on their own, imagine the wonders of eating this Haricot Berrue Salad with Chorizo!
Swiss Chard:
I love recipes that highlight the vegetable, especially the flavorful swiss chard- now just imagine the nutty flavors of Chard with a Tahini Sauce… Mmmm
