This time of year I always get hungry for good sandwiches, especially paninis. The weather is quickly getting hot out there and they’re so easy to make, without turning on the stove or oven. Just turn on the panini maker, assemble and serve- what could be better. Plus no sandwich is complete without a pickle, right??!
I got the idea for this delicious sandwich at one of my new favorite restaurants, The Hideaway, located in Northfield, MN. We discovered this delicious treasure of a place while we were visiting one of Minnesota’s many beautiful state parks: Nerstrand Big Woods State Park.
The Hideaway had the sandwich named Pilgrim Panini and thought it was fitting, as I would imagine it could be ridiculously amazing made with all the leftovers after Thanksgiving… And best part- it’s easy to make at home!
Pilgrim Panini Sandwich
Like most good sandwiches the trick is in having high end, good quality ingredients between the slices of your bread. For example, making your cranberry sauce from scratch may be more work, but it sure will taste a million times better. You can use this Cranberry Sauce recipe for cranberry perfection.
The Bistro Sauce is also something that can easily be varied depending on your tastes. I made my from scratch using this recipe, although I think you can buy it already made from your local grocer (in the condiments section).
Make sure you have your panini maker/grill turned on and heating as you begin to assemble your sandwich. That way you can just throw it on the “grill” once you’re ready and your Pilgrim Panini will be ready in no time.
Serve hot with a pickle.

Sandwich

- 2 Slices Bread
- 3 3/4" slices Granny Smith Apple
- 3 to 4 Slices Turkey Deli Meat
- 1 to 2 Tbsps Cranberry Sauce
- 1 or 2 Leaves Lettuce
- 2 Slices Provolone Cheese
- 1/2 Tbsp Bistro Sauce

- Place turkey meat on panini grill to lightly char (1 to 2 minutes). Remove from grill and place provolone cheese on top.
- Assemble sandwich with all ingredients- Bistro sauce should be spread on bread. Add deli meat, cheese, apple, cranberry sauce and lettuce. Place second slice of bread on top and place in panini maker.
- Sandwich is done when cheese is melted to your taste! Enjoy.
