Breakfast bagel sandwiches are easy to eat on the run, fast to make, and incredibly delicious. Plus you can pick ingredients that suit you and it’ll always be a new favorite sandwich!
This recipe is an all vegetarian bagel sandwich, unless you use my favorite refried beans recipe, which uses lard (but so worth it for the flavor!). It’s a twist on one of my favorite bagels from a small bagel chain in southern Minnesota called Tandem Bagels. The twist is that I usually layer on more veggies!
Bagel Breakfast Sandwich with Refried Beans
As you can see from the above photo, the ingredients for this bagel can be as simple or as complicated as you wish. Avocado, refried beans, bagel and egg are the necessary ingredients. Add on tomato, sprouts, spinach and your other favorite vegetables to make it truly unique! Oh- and make sure to get a flavorful bagel- I like onion or kitchen sink bagels, but a nice salt bagel would also do wonders for this sandwich!
Remember that if you don’t have time to cook an egg on the stove you can easily make one in the microwave while you assemble your other ingredients.
Cook the egg by placing it in a coffee mug with a little bit of water (1-2 tsp. max) and microwave it for 1 to 1.5 minutes. For the bagel sandwich stir the egg once or twice to break up the yolk. Don’t microwave for too long- If you the egg is cooked for too long it could become rubbery and tasteless.
Once your sandwich is assembled find a great place in the sun to enjoy the day and your meal!

- 1 Egg cooked
- 1/2 Tomato sliced
- 1/2 Avocado mashed
- 1 Bagel toasted
- 2 Tbsp Refried Beans
- Sprouts, onion or broccoli (optional)

- Cook the egg quickly on the stove or in microwave while toasting bagel and then assemble ingredients.
- Slather on the avocado on one bagel side and the refried beans on the other. Add tomatoes, egg and sprouts (if desired). Put together, slice in half and serve for a morning treat that's full of nutrients!
